Melt some high quality chocolate in a double boiler or the microwave. I like Bittersweet or even Unsweetened Scharffen Berger. Chop it up beforehand so it melts faster.
Into the melted chocolate throw in some pomegranate seeds and some minced candied ginger. Stir it up.
Pour the mixture onto parchment lined cookie sheets with more pom seeds on top. Sprinkle with coarse sea salt. Chill in the fridge.
